These Delicious Chicken Pie's are a family favourite! Even my fussy 3 1/2 year old will eat them!
1 Carrot chopped
1 Zucchini chopped
6 Mushrooms chopped
200g of Chicken Tenderloins chopped
1 Tablespoon of butter
1 Tablespoon of Oil
125ml of Chicken Stock
1 Tablespoon of plain flour
3 Tablespoons of Cottage Cheese
2 Sheets of Shortcrust Pastry
Preheat over to 170 fan forced. Grease 1 12 cup muffin tin.
Cook chicken in the oil till brown. Add butter and veggies to the pan and cook till Veggies are soft. Add chicken stock and simmer. Add flour and mix through. Turn off heat and add the cottage cheese. Let the mixture cool.
Cut each pastry sheet into 6 equal rectangles. Slightly stretch each pastry rectangle before putting the muffin tin. Add approximately 1 1/2 tablespoons of mixture. Fold pastry into an envelope and brush with egg. Cook for approximately 25 mins.
Makes approximately 10-12 pies
I guarantee there will be no left overs!
