Weetbix Chocolate Slice

An old school favourite! It lasts about a day in our house because we all love it!


5 weetbix crushed

1 cup self raising flour

1/2 cup coconut

1/2 caster sugar

1 tablespoon cocoa

1 teaspoon vanilla essence

70g butter/margarine

1/4 cup water


1. Preheat oven to 180C (160C fan-forced). Melt butter and mix into crushed weetbix.

2. Add remaining ingredients and stir to combine.

3. Line a square cake tin with baking paper. Press the mixture into the base. Bake for 15 minutes.

4. To make the icing, sift icing sugar into a bowl. Add 1 tablespoon of cocoa, stir in a small amount of boiling water, until you have a smooth, spreadable consistency. Pour icing over the slice in the tin. Spread to cover completely. Allow to set before slicing.

The icing is optional, I usually skip this unless we are having friends over!
